If we are talking before they enter Game of Thrones...Oberyn Martell would be great to follow around.
If we're talking after...there is something FRIENDS like about a show centered on Hot Pie and the tavern he works at.

Although I think Dorne and the Martells or Braavos would be a wonderful place to spinoff or Braavos considering the limited amount of time spent there, I think an interesting Westerosi perspective would be Podrick.
