I don't think I'd let Abrams direct again. He's very good in some respects - he directs action very well, and his films are exciting, visually impressive, and just plain fun! But he also has significant weaknesses. He's not especially interested in plot or constructing stories, visuals or characters that actually make sense. It's "rule of cool" every single time.
I'd throw Ron D Moore into the writing process, too. He's good people.
Chris Pine, Zachary Quinto and Karl Urban are all great, I'd leave them be.
Simon Pegg I'd replace. Sorry, I like him and all, but he's not Scotty. Scotty was the older guy on the crew, he was the guy who was everyone's favourite uncle. He was never the comic relief - the one time they tried that in ST V it came across as incredibly awkward.

I liked Beyond, and I'd like to see the character Jaylah come back, but if they green-lit a 14th Star Trek movie and told me I had the final say and could come up with any project I wanted, I'd choose to make a stand-alone Star Trek movie that isn't tied to the cast or events of ANY of the previous 13 movies. In fact, I'd even switch studios from Paramount to Universal (with a deal that Star Trek television rights would revert to NBC) My ideal Star Trek movie project would be a legit self-contained sci-fi adventure/thriller movie more along the lines of Interstellar and Europa Report, and I'd hire entirely new people to execute it (although I'd add a few Star Trek alumni to the project to ensure it gelled with Star Trek canon). Michael Giacchino was the best part of the Abrams movies, IMO, but I wouldn't keep him for this one since I'd want an entirely new score. Since it wouldn't be connected to the Abrams movies, I'd also keep Abrams away from any role in the film, aside from some kind of token "executive producer" credit:

ENZI DAX - Nicole de Boer (gets killed off early in the movie and replaced by XANUZ DAX, portrayed by Asa Butterfield) EMERGENCY MEDICAL HOLOGRAM - Robert Picardo

Looking at what he pulled off with the original crew, I wish Nicolas Meyer did one of the Next Gen movies in the 90s. Keep the Next Gen cast, get someone like Gary Oldman for the villain. I'd be there.
