The one that is usually referred to just as "goat cheese" (chèvre in French) is a soft, white, spreadable cheese. I love it and buy it often. It is not that expensive, at least not here in Montreal.

My favorite goat cheese is a Norwegian variety called gjetost. It is rather sweet and looks like brown soap. I rarely see it in stores anymore, though.

Gjetost is commonly available in the US Midwest...
It has a caramel consistency and is definitely not for all tastes...
