It's pretty rare for American films to give a shout out to their northern neighbor. However, The South Park film's entire plot involved Canada. Who remembers the great bit at the Oscars with Robin Williams singing "Blame Canada!"
I like this one from Iron Man 2, courtesy of Sam Rockwell - "I'd love to leave my door unlocked at night, but this ain't Canada."

I remember this line from Smokey & The Bandit 2 where Burt Reynolds says to a Mountie cop "Hey your ass is on fire. Why don't you go back to Canada and stick it in the snow."

A Serious Man – someone leaves for Canada, though it might have been in a dream.

Here's a few I can think of -
The Untouchables Man of Steel Quantum of Solace (Probably because writer Paul Haggis is Canadian) I think the X-Men films make some mention about Logan's nationality.

Titanic (1997) - the dead are taken to Halifax, Nova Scotia, as happened in real life
World War Z (2013) - the film ends in Freeport, Nova Scotia, one of the few remaining safe havens from zombies
Johnny Belinda (1948) is set on Cape Breton Island.
I Confess (1953) is set in Quebec.

Super Troopers 2 basically had two jokes: "Cops don't normally act like this!" and "Canadians tolk funny, eh?".

In the 50s there was some agreement between Hollywood and the Canadian government to set a few films in Canada. There is a horror movie--might be British though, Fiend Without A Face maybe-which was set in Canada.
Night Breed--the gateway to the monster world was in Alberta I think.
In X-Men Origins-Wolverine----when he gets told that he needs to fight for his country he replies, "I'm Canadian." He is also working in a lumber camp.
The Mad Room, 1969, is set on Vancouver Island. It's funny because it was most likely shot in California and the accents and behaviorism were very unCanadian but they mentioned a "Vancouver catering" service.

Oh yeah, another one-- The Great Escape. James Coburn yells in an Australian accent: "you bloody Canadian!"

"Average Joe's has shocked the Dodgeball pundits and made it to tomorrow's round where we'll separate the wheat from the chaff, the men from the boys, and the awkwardly feminine from the possibly Canadian."

Part of Deadpool 2's mid credits time travel montage is a gag in which Deadpool whacks "Ryan Reynolds" to prevent him from starring in Green Lantern and says, "You're welcome Canada."

They are far from high art, but Kevin Smith's "Tusk" and "Yoga Hosers" have some funny Canadian bits. I used to work for a French Canadian company and spent quite a bit of time in Montreal. These films do some of the stereotypical Canadian jokes, but they are done out of love. Johnny Depp , who is hit or miss for me, reminded me of a lot of French Canadians I met with his sort of dry humorous delivery.

Pirates of Somalia (2017) stars Evan Peters as a real life Canadian journalist who went to Somalia. Al Pacino plays a Canadian! The first half hour or so is set in Toronto and Canada is referenced throughout the movie.
