The secret to a really good lasagne, is to prepare it in advance, let it mature in the fridge and just before putting it into the oven you add the last layer of cheese. The cheese should not be ricotta, but a goats cheese or parmesan. And the herbs should be fresh, not dried.

Even though I'm Sicilian, I'm a sell-out. I use pre-cooked lasagna noodles and my dishes always come out great.
