I have watched only a few over the years.
The Adventures of Robin Hood
El Cid The Black Knight The Dark Avenger (very colorful)
What other ones are considered the gold standard for knights in shining armor, medieval castles etc?

I like The War Lord. Lots of King Arthur movies - Excalibur might be best. Kingdom of Heaven - director's cut - is very good too.

Don Kikhot (1957) Grigori Kozintsev. An excellent 1957 Soviet Union film adaptation Don Quixote is a Spanish novel written by Miguel de Cervantes. Published in two volumes, in 1605 and 1615, the masterwork is considered one of the most influential works of literature, one of the greatest works of fiction ever published. The story follows the adventures of nobleman Alonso Quixano who reads so many chivalric romances that he loses his sanity and decides to set out to revive chivalry (a medieval knightly system with its religious, moral, and social code), to undo wrongs, and bring justice to the world. Taking the name Don Quixote de la Mancha, he recruits a simple farmer, Sancho Panza, as his squire, Don Quixote, in the first part of the book, does not see the world for what it is and prefers to imagine that he is living out a knightly story.

Robert Taylor's unofficial trilogy is worth a look:
Ivanhoe (1952)
Knights of the Round Table (1953)
Adventures of Quentin Durward (1955)

Robert Bresson's excellent 1974 film Lancelot du Lac paints an unglamorous depiction of the Arthur Legend & the Middle Ages with much emphasis on blood and grime over the fantasy elements. King Arthur had sent out 100 knights to retrieve the Holy Grail, he is dismayed when it turns out that the mission was futile and most of the knights have died been killed along the way. Among those who have returned is the Queen's lover Lancelot...
