I just put an entire tenderloin in the oven, and then cut it in slices and squeeze a lime over the slices.

My current favourite is to by frying in EVO and butter mix, pork sirloin steaks 4/2/2 (if they are about 2 cm thick ie under an inch 4 mins on one side 2 mins on other then rest for 2 mins before devouring)
with home made Granny Smith apple sauce ( sliced apples microwaved n the tiniest amount of water and then mashed) boiled tiny new potatoes and some lovely kind of green vegetable.

Pork Vindaloo It's the vinegar that makes it so special. My sister also puts jaggery in it to enhance its taste.

I make pork loin chops. I season them with salt and ground white pepper. I sear both sides in the frying pan for a minute or 2 each, and then finish them off in the oven.

I prefer tenderloin. For a one-pound tenderloin I like to rub it with garlic, salt, black pepper and coriander. Then I sear it for about a minute and a half on each side, then put it in the oven (preheated) at 450 for a mere 12-14 minutes. I find I can't trust meat thermometers. But the method I use is foolproof. It comes out incredibly tender and delicious.
