Sophia Myles as Reinette Poisson/Madame de Pompadour in the Doctor Who Season 2 episode ‘The Girl in the Fireplace’. Since you said 'one or two episode'... Tony Curran as Vincent Van Gogh in the Doctor Who Season 5 episode ‘Vincent and the Doctor’ (he also had a cameo in the episode ‘The Pandorica Opens’). Also memorable... Christopher Reeve as Dr. Virgil Swann in the Smallville Season 2 episode ‘Rosetta’ (he was also in the Season 3 episode ‘Legacy’).

Robin Williams on an episode of Homicide: Life On The Street as a husband of a woman who's wife had just been killed. Powerful.

Too many to name from Justified so I'll instead go with Walt Goggins as Venus Van Dam on Sons of Anarchy.

Ha I was going to mention that Donald Pleasence Columbo episode too. David Warner in the Star Trek NG episode where he tortures Picard. Steve Railsback in the X Files two parter as the alien abductee (I dont remember him appearing again).
Burt Young in the Sopranos where he is the old hit man.
Sydney Pollack as the hospital orderly in another Sopranos.

John Larroquette - as narcissistic psychopath "Joey Heric" on "The Practice". Killed his lover (gay) admits he did it, they know he did it, now how is he going to get away with it? Larroquette was so good they had him back to repeat the character several more times so it really wasn't a "one-off". the practice

Two golden oldies off the top of my head:
David Wayne as a drunken minor bureaucrat hauled into the Twelfth on Barney Miller: "Name's not 'Heiss'--it's Heiss"
Freddie Jones playing John Steed in a ridiculous and engaging 'mind switch' episode of The Avengers (Who's Who)
