Silence, easily.
Manhunter is good, but some of its cheesy 80's elements (the hairstyles, soundtrack) have aged poorly.
Hannibal and Red Dragon are watchable due to Hopkins, but neither lives up to the standards of the first two.
Never bothered with Hannibal Rising.

Silence of the Lambs and Red Dragon. Only saw Hannibal outside those two. You're not missing out on not seeing 'Hannibal Rising.' In my opinion it was the worst of the 'Hannibal Lector' novels and films and I would have preferred if Thomas Harris had wrote a follow up to 'Hannibal' but if he does now Anthony Hopkins would be too old to play the character again in a movie adaption.
