I am cooking right now. Red split lentils in coconut milk. I am trying to make it in Sri Lankan style. Don't know if it will come well or not.

Friday is always pizza night, tonight we're having Amy's mushroom and olive pizza with a Caesar salad. I just use a Caesar salad kit, my favorite believe it or not is the Walmart Marketside brand and I try to get the chopped. I generally don't like to buy food from Walmart but they have the best salad kits ( the Italian salad kit is also very good) and this year I've gotten the best peaches I've ever had from Walmart produce, even better than Publix. Oh, I also think their bakery is good , the mini croissants are good and their cakes taste good as long as you take off the icing.

I'll have another go at the Costco Rotisserie chicken. I'll have a nice chicken sandwich, or do a chicken with pasta - I often have a pasta dish on Friday. And, I'll have sliced tomatoes & avocado with an Italian dressing.

Instant Pot rice and a big salad.
Brown rice, barley, quinoa, white and black sesame seeds, caraway seeds, poppy seeds, pumpkin seeds, chia seeds, almonds, ground flax, black pepper, garlic powder, and sesame oil.

That seems like an extremely healthy food. I do occasionally sprinkle pepitas and Chia seeds on my breakfast.

Here in Australia if we buy Rotisserie chicken then we usually wait till 10 at night as the supermarkets offer them at 50% discounts when it is close to their closing time. I love to buy them as even the leftovers serve well for a wrap or sandwich filling.

I don't know if they're discounted at closing time, here.

I had vegetable vindaloo, with basmati rice.
Onion, garlic, chilli, shallot, brocolli, cauliflower, mushroom, butter bean, tomato, vindaloo powder, vindaloo paste.

The version you ate is more Indian. Vinegar makes it a bit different and that part came from Portugal. My sister also puts an unrefined sugar type product called jaggery in Vindaloo.
