He ate a lot of salads, but there was one for which he almost but not quite gave the recipe for. My husband thinks I’ve perfected it, and it IS tasty. So if you want to try it: 1/4 to 1/3 head green cabbage, thinly sliced 1/4 med. to large onion, thinly sliced Two small tomatoes, halved and thinly sliced 1 package firm tofu, pressed, diced, and tossed with 1 tsp of fish sauce Dressing: 1 tbsp fish sauce 1 tbsp brown sugar or Splenda (my husband has diabetes, so he has to have the Splenda) Juice from 1/2 fresh lime Olive oil to taste Roasted salted or unsalted peanuts 1 tips chopped cilantro (optional)
Put all the vegetables in a large salad bowl. Toss with a good drizzle of olive oil. Mix the dressing ingredients together and pour over the vegetables, tossing well. Gently toss in the tofu. Sprinkle with the peanuts (my husband likes a lot of them) and the optional cilantro. Serve immediately. Serves 2 — or one husband like mine!
