I've never done the job, I wouldn't last five minutes. But I can understand how demanding it is, and that some customers flat out suck. That said, I have some peeves:
1. When the waiter/waitress says "are WE ready to order?" Why, are you having dinner with us?
2. When the waiter/waitress refers to customers as "guys." I'd like something a little more formal.
3. When the waiter/waitress touches me. I've had one put her hand on my back as I was headed for the table, or to touch my arm because she thought what I said was funny.
4. Disappearing for long periods - I usually order pop and I drink it pretty quickly, so I appreciate waiters/waitresses who come by within a decent amount of time to get me a refill. I've been left hanging for over 20 minutes before now. The waiter I had today picked up the glass for a refill the moment I put it down. WOW.

Waiter/Waitress touching a person may be considered a little less mannered and less courteous. Thankfully I have never met one who did that to me. I usually do not interact much with waiters (except when I have no clue about the menu). But I never complain about the food eve if the food sucks because our tastes are largely subjective and also because I do not want to make anyone feel bad especially when they are doing a stressful job.
Making you wait a long time can be annoying. I usually do not complain but that is a good reason to complain. I do not complain because I want them to give me the best food. My friends complain because they can't wait for the food and want to eat within miniatures of ordering.

The closest I come to a waiter type person is when asked 'Salt n vinegar on your chips mate?'

My wife was a server for a long time, so I know first-hand how difficult and stressful it can be. If my server is a bit lacking I try to overlook it as much as possible because of this.

I think being a waiter /waitress is one of the worst jobs to have. I couldn't do it because I would probably end up dumping a bowl of soup on top of an obnoxious customer's head. They are very underpaid and the nastiest customers seem to be the worst tippers. Too many people seem to lose good manners the moment they enter a restaurant. When I was younger, I ate out often, whenever I had a bad dining experience is was not because of the wait staff but was because of the behavior of other diners.

When the waitress doesn't get under the table for a bit, or at least come back and hand me her panties in a plastic bag, or she doesn't touch me, or at the very least offer her phone number.
More conventionally, though, the only things that annoy me are when any part of ordering, getting drinks, appetizers, the meal, the check, etc. takes forever, when the order is screwed up (pretty rare thankfully, though some things I avoid ordering particular ways), and when they don't come back around (very often) for drink (including water) refills.

They are very underpaid and the nastiest customers seem to be the worst tippers. Too many people seem to lose good manners the moment they enter a restaurant. When I was younger, I ate out often, whenever I had a bad dining experience is was not because of the wait staff but was because of the behavior of other diners. Some customers think the world owes them something and complain about the food all the time, trying to get a free meal. They are scum. Then there's the five $1 bills trick.

'I know I was barely listening to you earlier & haven't walked by for 25 minutes, maybe if I throw my hand on you, you'll give me money'.I just want them to seem available, I don't even love the 'How's everything?' 5 mins in. Sometimes those lines mean nothing if I'm stone cold waiting forever while they're outside having a smoke or on a phone. Non verbals, every 10 mins or so, is that too much to ask? 10 minutes is a long enough time to check table &/or eye contact in case want more or bill.

Colleague she works p/t at I'll call a semi-formal joint; of course they have to pool tips but the kicker is on slow nights, sometimes she won't even break even or something. Not sure 100% but I've heard her say she had to pay in during slow nights.

not caring about their job. I realize you are not curing cancer but it should not take 20 minutes [not kidding] for butter to find its way to the table.
service was bad or whatever and we tip the usual % only for the waiter waiting for us AT THE DOOR blocking it, demanding more $. really? we are generous tippers when things are fine or if things are NOT the waiter's fault but never less than the usual %.
'how are things here?' idk... let me taste it first!

When they don't know what they are doing. I had this guy who was a waiter at a place I frequented. He had to have been there almost a year. One time he took our drink order and dropped off the menus and silverware. We didn't see him again until he came to take our order. Then he took our order and left. We had to remind him to bring the drinks at some point. The guy honestly thought we wanted our drinks served with our food. What an idiot. We would have been having 2 or 3 drinks before we even were planning to start dinner!

When I ask for water and they put a lemon in it. If I wanted a lemon in it, I would've specified that when I ordered it. I like lemons, just not in my water.

It is a very stressful job. I waited tables for about six months when I was in my early 20s and have also bussed tables and hosted and worked in the kitchen. The pace can be insane and some customers are flat out assholes. That said, I guess my biggest, if only, pet peeve is when the server has only one or two tables (including the one I am at) and as I drink up a lot of soda, if they're just standing around, chewing the fat with a co-worker and I have to wait ten minutes to get a refill, I am annoyed. Other than that, I guess extreme unfriendliness is the only thing that bothers me. Most servers who have been at it for a while are very good at what they do and I almost always tip a minimum of 20%. If I can tell they went that extra mile + friendliness, I tip 30%, without reservation.
