In terms of being way too young to go Richie Valens (still a kid).

The Lennon choice isn't a bad one...He was 40 when he died and was just getting back into the game..He'd have some interesting things to say about our current political climate..The Bowie choice is more problematic from a music perspective. No doubt, the world is more interesting with David in it, but musically, how many more albums do you think he would have put out at age 70+ ? (The conceit is he comes back at the age he died..He had just turned 69...)

That would be fantastic just to see what he was like and dispel that silly "Amadeus" movie. But as a composer Mozart might actually have peaked based on his very last operas. So I would say Schubert. He was only 29 when he died and there aren't enough mature works by him. He was still on an upward trajectory.
