Since McCabe and Mrs. Milller is one of my favorite films ever, it's Warren Beatty.

Redford by a small margin. Both are handsome leading men with some major Hollywood movies to their credit..although nothing I'd pack for a desert island, except splendor in the grass (1961) with Beatty - who's movies I prefer overall.
Top 5s..
Redford all the president's men downhill racer the candidate the natural brubaker
Beatty splendor in the grass mccabe and mrs. miller the parallax view shampoo bugsy

Beatty, based on acting range.
If I brought pure movie star charisma into the equation, Redford would have been my pick.

Redford, I like him better and he has contributed more to the movies than Beatty, who was great in Deliverance though.

Redford for The Sting, All the President's Men, Three Days of the Condor, Sneakers, Spy Game...
Beatty for Reds, Dick Tracy, Shampoo, Parallax View
Beatty might have more range as an actor, but Redford's films in my opinion are more solid and re-watchable.
