For me, it's too "bready." Seafood should be the star of the show, rather than being suffocated in bread and cheese. A separate piece of crusty bread is nice. And, croutons on a salad are lovely. I also like tortillas for a fish taco, or thin crust on a clam pizza.
As for cheese, a little grated over the top, is more than enough. I wouldn't melt it.
It is a cute how-to video, though.
