Michael Mann although I'm not sure how often the actors he casts play against type. But I was thinking about two major examples, one being Val Kilmer in Heat and Tom Cruise in Collateral. Both usually played the good guys or the sexy lead in most of their films leading up to their appearances in these films. Both worked really well too.
I have to agree about Tarantino though at least with regards to actors that haven't been in a major film in years. I was thinking especially Don Johnson and Tom Wopat in Django Unchained. I don't think I've ever heard anyone say they were hard to work with, they are just "past their prime."

Tarantino
I would say Robert Zemeckis has a knack for it although it may not be intentional.

Tim Burton and Johnny Depp Johnny isn't as popular as he was 10 years ago, but I wouldn't say he's unpopular. Besides, this would count if Tim had cast him for the first time this decade. Yeah, I've read about his reputation, but he still finds work almost every year. I would say Robert Zemeckis has a knack for it although it may not be intentional. What do you mean?

He is prone to casting actors who were popular in the 1980's, but who don't get much good work anymore. Rutger Hauer Eric Roberts Matthew Modine David Bowie Tom Berenger He also cast Wes Bentley in Interstellar. He stopped getting work because of his drug problems. And he often casts against type Hugh Jackman in The Prestige Robin Williams in Insomnia Al Pacino in Insomnia Gary Oldman in Batman Begins Tom Wilkinson in Batman Begins Liam Neeson in Batman Begins Heath Ledger in The Dark KnightAnne Hathaway in The Dark Knight Rises Matt Damon in Interstellar
