Is there any kind of stunt coordinator or consultant for the smaller stunts like when one guy launches himself off a trampoline into a ceiling fan or crashing into each other on golf carts and other ones like that or is it more of a just, "Hold my beer and what could possibly be the worst that happens?" type of thing.

There were more professional stunt type guys on set, but it was probably more of a hold on to your hat and hope for the best situation too. A movie would have to have someone in order to get to legally produce such a movie.
I used to work with Steve-O, he was super friendly, but slightly intimidating because he would randomly do something dangerous/crazy and scare the crap out of everyone. Little did we realize he was compiling stuff for his Jackass audition tape!

Dunno, though the guy that took a shit in the toilet display in the hardware store (Dave England) lives in my hometown. Just some useless trivia.
