Sounds inviting. Do you have a favorite recipe?
It's been years since I've made chili ... and, then, I used the recipe from my Mom's "Joy of Cooking," from the '40s. I just looked at it, and it calls for a can of condensed tomato soup. That begs for an upgrade to crushed tomatoes. And, the only spice/herb it used was chili powder.

Interesting. I made some on Tuesday. I actually started on Monday. I had company for dinner on Tuesday so I started on Monday thinking I would finish that day because chili always tastes better the next day. I made it with ground beef and pork together. I used crushed tomatoes but I did think about adding tomato soup. I also used chili powder but somehow it was not quite right so I put in a package of mild chili mix from Wal-Mart (Great Value brand) and that tasted perfect. I browned the meat first and then poured off the fat, let the fat cool down a bit and then put it in the freezer. When the fat hardened I took it off the top of the meat gelatin or whatever you call it so I could return that to the chili later on. While I was waiting for the fat to freeze I cut up some onion and green pepper in large pieces and fried them a little with about half a teaspoon of salt, then put the meat on top of the onions and pepper, broke up the meat and added the chili powder, then the tomatoes, some tomato paste, about eight ounces of water, then the chili mix, some Italian seasoning, a couple of bay leaves, roasted some garlic in the oven and then added that, then a can of red kidney beans and the juice of one lime. At some point during that procedure, I put the gelatin in. Throughout the cooking process I added salt and pepper to taste. Then I put the whole thing away and the next day I cooked it for hours until the onions and peppers reduced. Then, when it was ready to serve I ladled it into large bowls and put shredded cheddar cheese on top (I prefer to use monterey jack but I had mild cheddar on hand) and about a tablespoon of sour cream on top of that and served it with a wedge of lime and a few saltines on the side. As always, it did not fail to please.

I lived in New Mexico for 10 years and was surprised that their chili was more like a soup than the thick, almost stew-like chili I had in the Chicago area. They also had a chili war going on between which was best: The Red Chili or the Green chili. I haven't made chili in a few years, when I did make it, I used red kidney beans, ground beef, cocoa, sugar, canned diced tomatoes, onions, and chili powder. Since we can't handle real spicy food, I always went light on the chili powder.

And, the only spice/herb it used was chili powder. varies, usually just what i have around. last couple have been: ground beef a few mushrooms couple cans diced tomatoes couple cans of red & white beans ground green New Mexican chile and a Moroccan spice mixture

Chili sucks. Worst Mexican dish ever. No flavor at all. Some are hot, but the hot is just on the throat, not the tongue. No flavor in chili.
Hate it when someone asks me to go to a yukky chili place. You know you're dealing with a sadist when that happens.
