For those who don't know, poutine is a Quebec dish that in its most basic form consists of french fries with cheese curds and hot gravy on top. There are many different variations with various toppings, and since a few years ago restaurants in Montreal (and now all over Quebec, in other parts of Canada and even abroad) participate in a week long celebration/competition where they create new recipes for the public's appreciation. www.lapoutineweek.com/How about the Avo-Ki poutine? As a Canadian I have to say that I've never tried poutine. Just the thought of it turns my stomach.

This is the one I tried yesterday (the only one I will be able to try this year, unfortunately, as I will be out of town on the weekend)
It was pretty tasty, although it really didn't look very much like a poutine.

I made my Socks version yesterday. I didn't have any cheese curds, so I melted a lot of Velveeta, poured it over my home-made french fries then pured beef gravy over the whole thing. Freaking delicious!

www.wisconsincheesetalk.com/2011/04/20/the-badger-poutine/Dream Dance(Potawatomi) had it for a while, now they have WI cheese curd fritters-which are equally yum. But there's a place called Red Dot, my brother got takeout from there, & it was delish.

I'm not sure that I know what the are. According to the nursery rhyme, Little Miss Muffet ate "curds and whey." I remember being told that "curds and whey" is, essentially, cottage cheese. If that's the case, could you take the curds from cottage cheese, and use that in Poutine? I'd, certainly, try it. Anything that starts with French fries and gravy can't be bad.
