I was looking at Box Office Mojos and found out that DOFP opened in 56 foreign markets and Logan opened in 70 foreign markets, while XMA opened in 43 foreign markets. Anybody know the reason for that?

Apocalypse is, at his core, a vampire. It’s possible that’s because of the subject matter of Apocalypse posing as various real life gods, namingly the Abrahamic god.

It didn't open in fewer markets. Box Office Mojo don't track every market at every point in time necessarily.
According to the same site, they have Winter Soldier down for more markets than Civil War, both movies released the same years as the two X-Men movies. In that scenario Civil War made much more in these other countries too.

So these Box Office totals are just what these movies make at the very least? No the international figure is the actual overall total from everywhere. That figure is always given first. Then afterwards the figures are given individually by the country but they won't report every single one. So for example a movie could make $50 million internationally for the weekend from 20 countries but then they'll only add like 12 countries worth of information. That said the grosses you see are never 100% exact.
