olive oil and red wine vinegar.
I do like some honey mustard ones at restaurants, but have it on the side and don't use much.

It's hard to top a simple blend of good balsamic vinegar whisked with some extra virgin olive oil. But I also like a few others, such as ranch or blue cheese. I also used to get this Asian Ranch dressing that was ranch dressing mixed with a little wasabi sauce. Fantastic!
Unfortunately, it disappeared off the store shelves, so I haven't been able to buy any. But, I could probably improvise and make my own.

Blue Cheese (I like Gorgonzola best), and Green Goddess, both of which I make.

Italian salads we make...
Tomato salad (do NOT add vinegar): olive oil, salt, dry oregano and preferably sliced garlic although sliced onion is good too. If you're adding sliced boiled potatoes then my preference of garlic over onion becomes more even. If you're adding a can of tuna then onions are preferable. Any of these versions need to have some fresh hot pepper for those who want to spice it up. Also, (if you know an Italian who makes them since I've never seen them for sale even in Italy), add or usually leave on the side pitted, squeezed of oil olives seasoned with salt, garlic, fresh fennel, and hot pepper to taste. And bread to sop up the oil and juice of the tomato. By far the greatest salad in the world.
Cucumber or boiled bean (in the pod) salad: red wine vinegar, olive oil, salt, sliced garlic and fresh or dry mint.
Leafy salads: red wine vinegar, olive oil, salt and sliced onion.

Modena Balsamic vinegar
Quality extra virgin olive oil
grated garlic
sea salt
ground black pepper
Mix and emulsify. Improves over time if you make a larger quantity.
Sometime I add Dijon mustard.

Depending on the type of salad and also what I'm in the mood for, I'd say I like a zesty Italian dressing most of the time. Sometimes I just prefer olive oil and vinegar mixed together too.

What makes a dressing 'zesty Italian'? I usually refer to the non-creamy Italian dressings as zesty Italian. The one I have right now is by Wish-Bone called Robusto Italian. There was one I had recently which said zesty Italian on the label which was really good but I can't remember the brand. Although I do like the creamy Italian dressings as well.

Sorry, I thought you made it yourself! I am looking for ideas to improve my regular plainer dressings.
