What's one thing you'd change about any of the various sagas that the show had?
I think things got way too over-the-top during the Buu Saga. They made him so unbeatable that everyone had to fight him like 6 different times with 6 different power-ups.
It's fine that they wanted to make him the strongest villain in the series, but they could have streamlined it a bit. In the end, it should have been the whole team putting him away for good. Have SS3 Goku, SS2 Vegeta, Mystic Gohan, and SS Gotenks fight him all at one time. Goku prepares the Spirit Bomb while the others keep Buu distracted.

I don't have a problem with any of the particular saga's. As a kid I hated how long it would take for them to actually fight. I get the point of it now, and from what I understand that's typical of manga style comics, but goodness it was annoying.

I would have tried to avoid the power creep that made fighters like Krillin, Tien Shinhan, Yamcha, et. al effectively useless. Sure, they had a moment here or there, but as the series progressed they were relegated to fight commentators and Goku cheerleaders. It seems like a waste of perfectly good characters.
They somewhat remedy it in Dragonball Super (the recent episode where Krillin spars with Gohan and Goku was awesome) but you still know they are so far out of their league that it makes no sense for them to hang around.

I'm pretty satisfied with most of the sagas, except for the Buu Saga. When Dragonball finally showed some amazing character development in the case of Gohan, the rescind his status as the main character and bring Goku back from the dead. Also, they forced the character development of Goten and Trunks.
Gohan, at the age of 10 within the hyperbolic time chamber, had to go through extreme mental and physical pain in order to ascend, as did Goku, Vegeta, and Mirai Trunks. However, Goten and Trunks achieve the transformation at around seven years old through meaningless playtime and a convenient plot twist. Then in another convenient plot twist, they form Gotenks and suddenly have the power to transform to SSJ3. If they could do all that in no time, when it takes the rest of the cast decades to build up their power levels, why not Whis and Beerus teach them instead of Goku and Vegeta? They'd be stronger than Zeno-sama within a month.
And I could go on even more about the horrible villain with no interesting motives, worst tournament in Dragonball history, and meaningless sacrifice of Vegeta. Because of their destruction of Gohan's character and issue with Gotenks power scaling, now in Dragonball Super we have two 50-year-old grandpas battling the strongest warriors in the universe, while their youngest sons who can miraculously learn 100x faster than them at a prodigal rate sit on the sidelines staying weak. And the second main character of the franchise, who's character has been evolving since the first episode of Z, is now a sideline character who studies for his comrades rather than fights alongside them.

I agree with most of this. I'm fine with them wanting to bring Goku back into the spotlight though. He's the main character, after all. But considering that he DID kinda pass the baton to Gohan during the Cell Saga, I think it should have been more of a team effort. And I'd even include Vegeta, Trunks, and Goten in there. Make it a two-family affair. Two families that should be enemies are working together to save the universe.
