...and made a really fantastic spice cake [see pic below]. I used a box of Betty Crocker spice cake mix, but I changed (and added) a few things.
First of all, on the package instructions, it calls for using a cup of water, 3 eggs, and a half cup of cooking oil. Well, I don't like the idea of oil, so I did a little research online and discovered you can use butter in place of oil - but, you have to increase the butter quantity by about 15-20% to compensate for the milk solids that are in butter. So, I used about a stick and a quarter of unsalted butter that I melted in a sauce pan prior to mixing.
Next, I found out (again by some online research) that you can embellish these boxed cake mixes by adding stuff to them. I ended up adding about a cup and a half of a combination of chunky applesauce, mincemeat pie mix, and about a tablespoon of chopped pecans (I wanted walnuts, but I only had pecans in my cupboard, so that's what I used).
Anyway, I mixed it up and baked it according to instructions, using a 9x13 inch baking pan. And I gotta' tell you, it turned out GREAT! I've already had a piece, and it's fantastic. Now I want to make another one the same way, only I'd like to add raisins in addition to the applesauce and mincemeat pie mix.

Congratulations! And, good for you, for thinking, literally, "outside the box." LOL Yeah, good one, I guess it was "outside the box," eh? Anyway, can't wait to experiment with some other variations. (But, I sorta' have to wait... that 9x13 cake is bigger than I thought. It's going to be at least a week before I can attempt another one.)

You should replace the water with buttermilk. See cake mixes are basically the dry ingredients to your basic cake recipe. So you should look online at cake recipes, then just sub the dry ingredients with the cake mix of your choice. Or it might make you think of some ideas...
