I think most people, including those living in the Mid-1000's, would have been able to tell the difference between someone having uncontrolled spasms, and someone dancing...
Like: When we see Michael J. Fox in interviews now... We KNOW he isn't "dancing"!
So why call it "dancing", If they were not doing something VERY similar to dancing?

I find it hard to believe that "poisoning" would cause such a thing, and...
"mass hysteria" usually refers to people running for the hills, because of "Martians landing on Earth"... but they would be running for the hills on purpose... This seems to be something that they were doing against their will...

It is my opinion, that because others would "Join In" with grounps as they went from town to town, that either the whole thing was... some kind of "massive hoax"... or perhaps, there was some kind of "Pied Piper" force at work, mind controlling people, to get up and dance...
Sound Technology is now being used to do incredible things...
The walls of Jericho, were believde to have been destroyed with soundwaves created by horns... and opera singers can shatter glasses with their voices...
Some people are able to hear the "Taos Hum":

And so I do believe, that it could be possible, to generate some sound, that there might actually cause people to involuntarily "dance"...
However, with that said... Who really knows what was going on back then.
