It should probably go without saying these two were the main characters of the Infinity Saga of the MCU. Thor was also a pretty significant character, but he clearly served as the tritagonist. That just leaves Tony Stark and Steve Rogers. So, between these two, who would you say was the main protagonist?

I think Tony Stark actually.
Rogers does have one win if you will since it was Stark who appeared in a Captain America movie & not vice versa. Iron Man movies never got quite so far as dealing with Avengers geopolitics. Then again, Stark I'd say was the more popular until CW, & doing a solid for Cap in his movie was easy. Captain America appearing in an Iron Man movie might not have felt as key. Stark also launched Spider-Man for the MCU.
It was Stark who first appeared on the MCU scene, who was first exposed to Thanos' cosmic presence towards Earth, & of course it was Stark who offed Thanos in EG. He funded the entire Avengers show, gave them all their tech.

Iron Man, he started the whole series with his own first outing, and his name was put in front for pretty much all the Avengers movies.

Has to be Iron Man. He had three of his own films and was a dominant protagonist in all of the Avengers films as well as one of Cap's own movies. Cap is definitely in second place, though.
