I always assumed it was a hangover or carried-over convention from the format when Bibles and books of scripture were first printed for a mass audience, in quarto or folio format. The production of a such pervasive page size and folding meant that two columns was the most aesthetic and convenient typographic design. Shakespeare's first folio has this same, standard, two column lay out as well.
