Be it a guitar solo, etc., rather than the song as a whole?

Ween - "Pumpin' 4 the Man". Dig that whole song, but the pitch shifted guitar solo really gets me a-going. It's brown, man. Brown!

The bridge right before the chorus in "Centerfold" by J. Geils Band, there is a funky bass line. I didn't even know this until just recently. Surprising because I like songs with a lot of bass. As well, I LOVE the chorus to "You Spin Me Round (Like A Record)" by Dead Or Alive. In fact, it was one of the songs featured in the season finale of "Beat Shazam". Watching the contestants and crowd do their own dance to the song....I could watch it on loop ALL DAY. Joker's Wilde

The gear-shift halfway through 'Station To Station' - the song has four stages, I guess : the train sound effects, the introduction of The Thin White Duke, the slow hypnotic march for the next few minutes, then a fierce launch into the up-tempo section with the repeated refrain of "It's too late..." But even the up-tempo chapter has a shift within it, a seamless progression into the next gear up, Bowie's musical equivalent of switching from the local train to the express in one quick maneuver.
After the lines "Drink to the men who protect you and I Drink, drink, drain your glass, raise your glass high" SHIFT INTO "It's not the side effects of the cocaine I'm thinking that it must be love"
A tremendous track throughout and that mid-song double-shift just seals it for me as 2nd ever Bowie favourite song, edged only by the equally epic 'Teenage Wildlife'. Name of god, I'm getting excited just talking about these classics.
'STATION TO STATION', time-stamped at Bowie stepping on the gas :

Love the intro to Kid Creole & The Coconuts', 'Annie, I'm Not Your Daddy', and wished it could be extended.
Then I found an artist called, 'Creative Use', who did just that.
