Porcini is absolutely my favorite. However, porcini sauces can be very rich, and I can't eat a lot of it. For accompanying a steak or a roast, I like to use Crimini.

Portabella, I love the big caps filled with cheese, scallions and black olives cooked in the oven. I'm a big mushroom lover so I'll eat any mushrooms I can get my hands on. I often sauté sweet onions and sliced mushrooms (any kind) in butter.
