I've looked at articles, and videos about "Cusk." I'm really intrigued.
Articles describe it by a number of names, but I'm not sure if they are true alternative names for the same fish ... or if the fish in question are just very similar.
Evidently, "Burbot" is the name that is popularly used in Europe. "Ling Cod," is one of the names that is mentioned, and I've heard of that, often. But, there are varieties of Cod. I'll have to look further.
I'm a member of Chef John's "Foodwishes.com" discussion group. He had a chat session, earlier today. I asked if he was familiar with Cusk. He said he isn't, but that he loves cold-lake-water, white fish. And, he said that he researches questions that he can't answer, on the vlog. Maybe he'll have further information.
