Meet Joe Black (1998)
The World's Fastest Indian (2005) (in terms of performance ill go with this)
but with that said... it seems The Silence of the Lambs (1991) is probably THE movie he's known for from what I can tell. but it's hard for me to back a movie I don't care for at this point in time. because in terms of performance movie combo I think The World's Fastest Indian is his best performance even though Meet Joe Black is the #1 movie he appeared in if you ask me.

Bram Stoker's Dracula
Howards End
Not a fan of his Hannibal Lecter. I feel it's vastly overrated and he was supporting rather than lead.

The Remains of the Day is a phenomenal performance but the movie is so depressing I only watched it once.

The Remains of the Day Bram Stoker's Dracula Howards End Not a fan of his Hannibal Lecter. I feel it's vastly overrated and he was supporting rather than lead.My favorite performance of all time.  He is obviously supporting though.

Nixon(there aren't enough superlatives to do his performance justice in this film)

Audrey Rose (not a great film, but Hopkins was quite good in it)
Silence of the Lambs
Blunt: The Fourth Man (BBC telefilm where Hopkins plays Cambridge Spy Ring member Guy Burgess; eccentric and moving performance from him.)
