Austin/Hogan has to be the biggest one, being between the two biggest stars in the modern era. Only one I can think to add would be CM Punk/Austin. I think that one would've been pretty sweet too.

Stone Cold vs Hulk Hogan- The ultimate genaration vs generation match. The two biggest stars of the two biggest eras in WWE history. The Golden Age Era and the Attitude Era. The hype for this match would be unlike any other. On a professional level, and on a personal level. These two have had years of built up tension and would've had a lot to go over in their feud. From their issues in WCW, which led to the Monday Night Wars, to Hulkamania vs Austin 3:16, and who knows, there may have even been a mini feud between Gene Okerlund and JR. This would've been the biggest match of all time.
Stone Cold vs Goldberg- The biggest dream match of the Monday Night Wars. Unfortunately Goldberg made his WWE debut a couple years passed due, as the WWF vs WCW storyline had come and gone already, and Stone Cold just retired(the same night Goldberg made his first appearance to be exact).
Stone Cold vs John Cena- Cena has a history of past wrestlers threatening his run at the top, and he's overcome the odds every time. But just how well would he fare under pressure against the posterboy for the Attitude Era? To me this would sound like a great opportunity for Cena to beat Austin at his own game by turning heel to keep his spot. Shades of WrestleMania 17.
Stone Cold vs CM Punk- Two wrestlers famous for working against the system. The difference is, that CM Punk is Straight Edge and Stone Cold represents everything he detests. Beating him would be the ultimate way of sticking it to the system.
Stone Cold vs Brock Lesnar- Austin bailed on Brock at the beginning of his career and then Stunned him at the end of it back in the early to mid 2000s. Brock would see this match as a chance at payback, and probably as a chance to flaunt his current accomplishments at the expense of Austin's return. Best believe Paul Heyman would be involved in this feud if it ever happened.
Stone Cold vs Randy Orton- The "Legend Killer" wants to beat the top guy of the Attitude Era, and show him "The Viper" is better than "The Rattlesnake".
Sting vs Randy Orton- "The Legend Killer" wants to end the last "outlaw" of WCW, and show him "The Viper" beats the "Scorpion".
Macho Man vs Randy Orton- "The Legend Killer" wants to end "The Madness" for good.
The Rock vs Batista- Batista doesn't believe The Rock was any different from himself in his generation, and Hollywood was a coverup. The Rock thinks Batista is a jealous wannabe, thus setting off a big match.
Brock Lesnar vs Batista- A missed opportunity from a few years ago when WrestleMania 30 was coming up and Brock Lesnar was getting build up as "The Beast", while Batista was about to reappear as "The Animal".
nWo vs DX- The two most controversial stables in wrestling history, coming from the same era, and side-eyeing common allies.
Daniel Bryan vs AJ Styles- These two represent the current wave of hardcore wrestling fans gunning for "real" wrestling over entertainment. Unfortunately Daniel Bryan retired just before AJ Styles finally joined WWE, so we'll just have to wait on Finn Balor vs AJ Styles instead.
Shawn Michaels vs AJ Styles- AJ Styles is a proven veteran. He's wrestled all over the world, and had some hard fought matches over the years, earning himself names like "The Phenomenal One" or "The Best Wrestler in the World". He's payed his dues, and he even beat WWE's top star, John Cena, within his first year with the company. What would really put him over the top though, is if he actually got Shawn Michaels out of retirement for a one time match, provided he still has what it takes to be "Mr. WrestleMania", and put on a headlining, showstopping event.
Shawn Michaels vs Sting- Two of the most loyal franchise players to ever wrestle and stand the test of time, except for different companies. Shawn Michaels was team WWF, and Sting was team WCW.
The Rock vs Sting- See above.
Daniel Bryan vs Kurt Angle- Kurt Angle's dream match before Daniel Bryan retired. They had a little sitdown on the actual technicalities of a match between them, but they're both also so nerdy, they could've had a fun match on top of a serious one.
The Rock vs The Macho Man- A generational bout between wrestling's most commercialized personified. The Macho Man had the Elbow Drop, and The Rock had the People's Elbow.
The Road Warriors vs The Dudley Boyz- Two long time tag teams with an atomic impact.
Mankind vs Bray Wyatt- The Eater of Worlds wants to put the tortured soul out of his misery, after he rejects a "Wyatt" reformation.
Mick Foley vs Dean Ambrose- This match was actually supposed to happen a few years ago, but Mick Foley wasn't cleared to wrestle anymore. It's too bad, because he may have wrestled someone who's just as crazy as he is, in Dean Ambrose.
The Brothers of Destruction vs The nWo- The Undertaker and Kane had such a checkered past, they would've been easy targets for the nWo to try to fuck with every single week. Of course, they would've literally been playing with fire though, so they likely would've got burned in the end.

Well, The Sandman DID fight with Stone Cold back in ECW for the world title in a triple threat match, but that was before Austin entered the WWE and became the rattlesnake we all know today.
Same with Sting and The Undertaker, they had a match once but it was a while before either made it to the big leagues.

Steve Austin Vs Hulk Hogan - So sad it never happened, I was surprised when it was Hogan Vs Rock > Hogan Vs SCSA.
Andre the Giant Vs OLD Giant - Im talking both in their prime, when The Big Show was the Giant. A great dream match.

Dick the Bruiser & The Crusher vs. The Road Warriors: Some wrestling writers used to say that Bruiser & Crusher were the "Road Warriors" of the Sixties. Makes one wonder how things would have gone.
Nick Bockwinkel & Ray "The Crippler" Stevens vs. Arn Anderson & Tully Blanchard: Bockwinkel and Blanchard were both cool and devious while their partners were unpredictable and could blow in a second.
Bobo Brazil vs. Ron Simmons: Both of them were black men who didn't play the stereotype of the jive-talking "brutha man". Brazil, especially, carried himself with quiet dignity.
Andre the Giant vs. Big Show: For obvious reasons.
Harlem Heat vs. Rocky Johnson & Tony Atlas: The premier black teams squaring off.
Mahabarli Sheera vs. Jinder Mahal: Well, there's still a chance of this happening.
The Midnight Rockers vs. The Rock N' Roll Express: Both agile, both with a blond and brunet member.
