With a hard-boiled egg, I give it more than a stern tap on the saucepan, I positively whack it. That way the traumatised shell is easier to peel away, without the rebellious white egg skin uprooting chunks of hardware and exposing the software.

My mom showed me how to cheat with the spiker tool. They break so easy, shell is divided but closed, easy disposable.

My routine in cooking hard cooked eggs is using week old eggs the from the store, two weeks of their farm fresh, boil them for 12 minutes, plunge them in cold running water, break the shell on the inside of the pan firmly. More times than not the egg just falls out of the shell.

Catman gently taps all around the egg and then rolls it around a bit with slight pressure. That usually works fairly well.

More times than not the egg just falls out of the shell. You mentioned the age of the egg martin. I think this is really the trick. If the egg is just home from the store they don't peel well. They have to be home a while then it works pretty well.

I find it easier to peel them under running water. Putting them in a jar half full of water and shaking works great sometimes.

Honestly, I don't do hard boiled eggs or deviled eggs or egg salad so I'm getting this from YouTube food hacks.
