One of my favourites is golden split lentil dal (dahl) curry garnished with fresh coriander. A well-made dal curry has great texture, warmth and consistency that makes it a pleasure to eat, especially in winter. If you're feeling particularly hungry, you can add a small tin of sardines or mackerel with Omega-3 and Vitamin D for an enhanced eating experience.

Classical tarka dal.
Minimalist tarka dal.
Khatti dal.
Spinach and sweet potato (& lentil) dal.
Black dal.
Red lentil and squash dal.
Lime and coconut dal.

The red lentil with squash looks/sounds delicious. I'm curious about the black dal ... I'll look it up.
I've made lentil soups, but I don't follow any given recipe. I look around to see what I have, and run to a local produce store, if something comes to mind that I don't have on hand. Soups and stews are forgiving, that way.

Spiced carrot and lentil soup.
Lentil and bacon soup.
And a classic from Greece ...
Lentil soup with spinach and lemon (can also add turmeric).

We have a tradition in our family new years eve... lentil soup with hot dogs cut up. It is to ensure good luck and health [whatnot -- whatever it is ITS ALL LUCK]
no major recipe although there are special recipes out there. Progresso soup is just fine.

Lentil soup with hot dogs, or any sausage, is lovely. A popular favorite for New Year's Eve/Day, is made with black-eyed-peas. Again, lentils could be added to the mixture, for added flavor ... and added luck.
Hey, 2020 has been a little "wanting," in the LUCK category. That could be a good bet for a 2021 New Year's meal.

As a greek, I have never eaten lentil soup with spinach. Lentil soup, garlic, onions, maybe carrots (baby ones are good) and celery. Cut it with vinegar added after the fact to taste. greek lentil soup

Because of Covid, we're going back into a "purple tier," as of tomorrow evening. I'm going to lay in supplies, so I don't have to go out to shop. I see a lot of good lentil dishes coming my way.

At least once a month I make a big batch of lentils with potatoes, onions, cubes of beef or pork and maybe carrots, tomatoes and/or red peppers if I have them. I used to do it in a regular pot, stirring all the time and adding water when necessary, but now I use a pressure cooker - just throw everything in there and let pressure do the work. It saves a lot of time, although sometimes the lentils come out not as soft as I'd like.
I love dahl in Indian restaurants but making it at home is above my pay grade.

I once went skiing in Andorra. The bar on the snowfields had a big pot of lentil soup. Green lentils, tomatoes, chilli, whole cobs of garlic and chopped up hot chorizo sausage. Just the thing after a cold day on the snow. I have tried to recreate it at home but I am not courageous enough to put enough garlic and chili in, and the local chorizo isn't anywhere near as spicy as the Spanish/Andorran one.

The patty itself is amazing and when you put it in a wrap with humous sour cream tabouli and sweet chili sauce, it is the thing that dreams are made of in deliciousness!

OK, here is my spamming lentil patty recipe! 3 slices bread 1 tablespoon oliveoil 1 large brown onion chopped spray oiive oil 2 cloves garlic minced or squashed ( a technical cooking term) 2 teaspoons ground cumin 2 teaspoons ground turmeric 1 cup of lentils ( I use the greenish brown ones, cooked in stock for half an hour) half cup of fresh green herbs of choice ( coriander, basil parsley or whatever you prefer) 1 large egg beaten 2 tablespoon plain flour Method process bread in processor to crumbs heat oil in frying pan over medium heat and fry onion adding garlic later and cumin and turmeric. Cook 1 minute. Add lentils, onion mixture, herbs to food processor chopping roughly ( I like to leave a few whole or half lentils so not to a paste ) Transfer to a bowl and add breadcrumbs, then beaten egg, and then flour and stir until combined. Form mixture into patty formation and place on tray. Spray with oilve oil spray and then using a little extra olive oil and medium heat fry in frying pan until golden brown both sides, about 3 mins per side. As previous mentioned I then spread a lavash or Turkish bread wrap with hummus, then a patty or two, then tabouli, sour cream and sweet chili sauce and go to healthy heaven when consuming. Enjoy. Since it is a little labour intensive I usually make a double quantity batch and freeze the rest for later scrumptiousness.

I make a wicked Thai red curry and add it to the spice paste and other ingredients with coconut cream. Delish.
