In my experience working with tigers, they will even eat the gastrointestinal tract (although they manage to squeeze the gastrointestinal contents out).
It depends on both the carnivore and the prey. Many predators eat prey much smaller than they are and eat the entire prey in just a bite or two. Owls swallow mice and other rodents whole, for instance. Almost all carnivorous fish, reptiles and amphibians eat their animal prey whole. Whales eat their prey whole, with the exception of when orcas eat large whales in large bites.

There was this pride of lions, 11 adult lionesses, 1 male and 10 cubs and they got a giraffe. Because this group was massive they ate the whole giraffe in a couple hours.

But a lion can not open the scull of a giraffe, buffalo or buk. The only cat that can do that is a south american panther. In africa this duty is given to the spotted hyena, that can crush bones due to his powerful bite.
Yes, they do, if they can open the skull. Hyenas can break enormous bones and definitely eat the brain of any animal they kill or scavenge. But house cats, for example, are happy to eat the brain of any rabbit or squirrel they kill."
