It's an interesting idea but tough to prove. Whenever something happens that seems to confirm it, reality could be overwritten and it could be considered a mental aberration on the part of the person who experienced it or could be considered some sort of quantum effect from an otherwise mostly stable universe.

However, with god I have to wonder how they deal with infinite complications and how all things finite and infinite converge into one being. A simulation creator doesn't have to be as complex as an all powerful god so while we can wonder whether it truly exists, there's not as much question of how it could possibly work.
