The Mirror Crack'd Body Double
edit: I'm sorry, I meant "Blow Out" not BD. You already cited the 1981 film. I like the film, even if Nancy Allen gives a terrible performance. But that opening movie-within-a-movie, with the girl screaming in the shower. Wow, that was some funny shit. I love John Travolta's laugh that follows.

I believe Play It Again, Sam begins with an obvious movie.
Purple Rose of Cairo?
Citizen Kane and Big Jake begin with newsreels.

Wes Cravens New Nightmare I thought about that but it's technically a dream sequence. Scream 4 Tropic Thunder

Been a while since I've seen it, but I'm pretty sure Matinee opened with a scene from MANT!

Not sure if this applies, but Frankenstein 1970 appears to begin with someone being murdered only to be revealed as someone making a movie.

It is more of a recorded performance done in the style of an old cartoon, but the beginning of The Triplets of Belleville.

+1 for Triplets, animation or not.
'In the Mouth of Madness'? Not sure about the open, a film inside a book.
