Hmmm. Cabbage would add a "crunch," to mix of burger additives. And, cabbage has a slight peppery flavor (at least, to me), so it might work.
I once tried making Cole Slaw with Brussels sprouts. After all, what are Brussels sprouts?? Little cabbages! Long story - short ... don't bother.

I always have Napa cabbage mixed in to my salad. We had Chinese cabbage when I was a kid, and it seems like the same thing.i get it at the Chinese market.
I try to find the smallest with the greenest leaves
