As a kid, the only cheese I would eat (and pretty much ALWAYS cheddar, or American) were those cooked/baked in something, for instance, grilled cheese sandwiches, pizzas, cheeseburgers, cheesy potatoes, etc........but NEVER would eat "raw" cheeses of ANY kind, and wouldn't touch ANY that weren't orange! Well, like others, I finally grew up and started appreciating a number of different cheeses ( Monterey Jack is a favorite, with Pepper Jack probably my #1), but STILL don't eat any of the 'fancier' cheeses, like brie, Camembert, Gouda and DEFINITELY will go NOWHERE near blue cheese of ANY kind !! Who knows.......maybe someday I'll get there..... What are your faves ?? SAVE FERRIS

I like American, Swiss, Cheddar, Parmesan, and Mozzarella. I donβt know of any cheeses I donβt like.
I never eat cheese by itself, itβs always on some other food.

I don't think I will ever be able to eat goat cheese again, I got very sick on goat cheese ravioli in May, it took a month before my digestive tract was back to normal. The only feta I'll eat will be from cows milk.

I'm a fan of cheddar, mozzarella and sometimes parmesan.
I like having cheese on other things more often but I don't mind eating cheese sticks.

I don't think I have ever met a cheese that I disliked.

I've eaten every cheese on your blue image and almost every cheese on the other one too. Sheep's milk feta is the best. The only cheese I won't eat is the one with the maggots in it.

Well being a Wisconsinite, peanut butterholic, & self proclaimed mouse-love cheese. Check this out: www.reddit.com/r/Cheese/I currently have ~ 10 different kinds of cheese in our fridge-not including sliced varieties. Including Gruyere, my favorite, which I take a small slice once a week & savour. Expensive, so savoring is the only way.

I've read about that one! I wouldn't try that either - not that that's even a possibility, since as far as I know it is illegal even in the places in Italy where it is produced.

I eat and like most.
Don't like Brie, Camembert, or sharp cheeses. Probably don't like stinky ones. Goat cheese weirds me out, but I do like Maytag Blue, which uses it.
Used to eat more Swiss and Jarlsberg, not my taste now.
Gouda is not fancy - look for smoked gouda, it's yummy!
Favorites are aged cheeses that have crystals. I do like blue/bleu cheese. I buy it but usually have to toss some.
I have to have several cheeses on hand at all times. Just finished a Wasabi Horseradish Cheddar. I probably should not buy pasteurized process cheese, though, and stick to the conventional ones.

Some cheeses I don't like by themselves, like Swiss but like them on other things or cooked into things. There aren't any that I can think of offhand that I don't really like, but Limburger would probably be on the list (haven't tried it though) I'm sure that I would pass on the maggotty cheese also!
Sweetpea - how do you keep your cheese from molding? If I have most cheese for any length of time, it starts to mold.

sunshine, you can freeze cheeses with low moisture content such as cheddar, colby jack, montery jack, mozzarella, and provolone. Most cheeses you can buy already shredded or sliced will also usually work well.

The gruyere I take out of the original package, put wax paper around it, then in a plastic bag. We put them in our refrigerator's sections technically for fruit and vegies. When we initially get them, I make sure it has a good date on them. Don't pull from the front-because one-usually it's the older one(fifo for those in the know). And two-the ones in front are subject to the warmth of the store. Whereas the ones in the middle have cold all around them. Yes, you can freeze cheese, but eating it is far better.

LOVE Cheese. The only one I haven't liked is Brie, but I suspect that the one time I ate it (at a catered business meeting) it had gone bad. Looking forward to giving it another try.
I crave all styles of cheddar (e.g. sharp, medium, Colby), mozzarella, provolone, swiss, pepper jack, monterey jack, others.

Like Catman, I am not a fan of Swiss, but the rest of your list sounds good. Since I am lacto-ovo-pescetarian, I eat cheese frequently for the complete protein aspect of it. By itself, grilled cheese sandwiches, pizza and sprinkled on top of baked vegetables, it' all good. For my age, 68, I am in pretty good shape, though I need to walk more often. Now that it is cooling down in autumn, it is time for hiking a bit. I have a bit of an OT issue that I would like to have your opinion on. Do you feel that the board us agnostics and atheists post on is becoming a more hostile environment for us freethinkers and science-based folks? It seems to me that disagreeing with theists is becoming less tolerated.

I will say that in threads debating free and scientific thinking with religionists and politics with MAGAs on that board, my policy is to state my position, backing it up as best I can. If a conservative replies with alternative facts or says something particularly stupid, I might set him/her straight and maybe mock them a little. Except for rare circumstances, I don't go much farther with them. It is a waste of my valuable time. If they think my not continuing means they vanquished me, then let them. They are not winning much these days at anything.

Now the theists are militant.

There aren't any that I can think of offhand that I don't really like, but Limburger would probably be on the list (haven't tried it though) I took the plunge, as they say, a few years ago just to put and end to the mystery and tried Limburger the recommended way, on course rye bread with a thick slice of onion. From that experience, I am certain that is the way to eat Limburger but I doubt I would ever bother with it again. That said, I have never tried any other kind of cheese that I dislike. I will list my favorites/recommendations in descending order. 1. Gjetost - brown norwegian goat milk cheese. looks like brown soap. tastes sweet. 2. authentic English Cheddar. I spent a whole summer in england once and had it all the time. closest thing to it in America is extra-sharp New York Cheddar. 3. Brie - baked Brie is a specialty of mine that I make for dinner guests occasionally. 4. Cottage Cheese - I could eat it every day. 5. Neufchatel - great on a bagel. 6. Pecorino - livens up most any recipe. 7. Provolone - necessity for any sub. 8. American - no matter what the foreigners say, it is the only cheese for a cheeseburger, omelette, or Philly cheesesteak. 9. Camembert - not much different than Brie but you have to let it sit out of the refrigerator for a while before eating it. 10. Feta - best cheese for a tossed salad.
