I decided to start a COOKING BLOG to keep track of the dishes I attempt to cook from time to time. And what better place to do it than with my friends on proboards! I’ll try to find a way to link pictures to accompany the posts.

Mr Ackbar prepares… Pumpkin Chocolate Chip CookiesMade from scratch, including homemade pumpkin purée from roasted sugar pumpkins. I made these last year and wasn’t entirely satisfied with them. This year’s attempt at improvement strangely resulted in an even blander cookie. The texture is nice: very moist and cake-like. But the taste is mediocre. If I didn’t have ten more cups of purée in the fridge I would probably give up on this recipe. Rating: Edible

@forceghostackbar Cookies look VERY edible indeed ! FWIW the good folks at Cook's Country who study and test such things say that for pumpkin taste, texture etc ... canned pumpkin is the way to go ! Its water content, flavor etc. is reliably consistent. I tried making pies from garden pumpkins and Libby's and agree with them. PLUS opening a can is so much easier and kinder than sacrificing a potential Jack'o-Lantern!

@forceghostackbar Cookies look VERY edible indeed ! FWIW the good folks at Cook's Country who study and test such things say that for pumpkin taste, texture etc ... canned pumpkin is the way to go ! Its water content, flavor etc. is reliably consistent. I tried making pies from garden pumpkins and Libby's and agree with them. PLUS opening a can is so much easier and kinder than sacrificing a potential Jack'o-Lantern! I just read something similar this morning actually. But… Chef Ackbar prides himself on making everything from scratch. He also refers to himself in the third person!

Especially when it improves the result ! Think of it like the can of evaporated milk which is a standard ingredient in many a punkin pie !

It is going to bug me til I remember what they were. Yours were edible, huh?? 🤣🤣🤣

Pumpkin Chocolate Chip Cookies Version IINew batch. Used 30% less flour- which sounds scientific, but the truth is… I ran out of flour. But it worked! They turned out far more pumpkiny this time. I also doubled the amount of spices and used 50% less chocolate chips. Still not my favorite recipe I’ve ever made, but I’m mostly satisfied with the results. Rating: Suitable for human consumption

Chef Ackbar Prepares… Beef Barely SoupPart One: the broth… An entire day is spent simmering roasted bones, thyme, peppercorn and onion. 8-10 hours. The result is well worth the time! 😋
