Metal is a very broad genre that can include a number of different sounds and styles (alternative metal, industrial, goth, rap-metal), so I would suggest opening your horizons beyond Metallica and Iron Maiden:

I'm not a fan of the other bands you listed. EDIT: Although they formed in 1984, I've always considered Sepultura a 1990s metal band because of when they came to my attention. I own both "Arise" (1991) and "Chaos A.D." (1993).

I've not heard of the outfit Life Of Agony but I've enjoyed records by the rest of them and I think I share your general view on the rigidity of musical genre and subgenre classification among some.

Jethro tull is one of mine. Because of their first 90's album.
Basically since I've heard their album from 1987 called metal. I'll call this other album metal as well. Although I don't remember if the album from 1987 won an award for best metal album or not.
