I made enough vindaloo for two days yesterday... But my poor ringpiece took such a traumatic mauling this morning, that I shall be adding some water, and tomato puree to the curry, and cooking in some pilau rice. Hey presto, delicious vegetable curry and rice soup... And the added liquid will dilute the heat, and the rice bulk it out, enough to avoid my battered arse suffering again tomorrow morning 👍 Catman told me that vindaloo is an Indian take on a Portuguese dish, vinegar e ailho. I grew up with that, but we dont burn our inners out with it.🤣

This evening I shall be making falafels on a bed of tomato, onion, beetroot, mushroom salad, in ciabattas. I love falafel! BTW Americans say beets, not beetroot. Aussies put a slice of pickled beetroot on a burger (Strange lot 😏) Everyone loves falafel... I've been to Falafel King in Bristol with meat eaters and got them to try the falafels in Laffa bread, with your choice of salad and humus, and sauces... They think it's the best thing ever 😋

Oven chips, or proper burn your hoose down using a chip pan chips? Definitely proper chip pan chips. Oven chips are a poor substitute. It’s me old mum that makes them. I wouldn’t have a clue! Wouldn't have a chip pan myself. I've an occasional habit of passing out with the oven on. Can't get away with that with a chip pan. Make sure your old ma knows to smother it with a cloth if it goes bad on her, not to throw water at it.

Nepali dumplings....it's called Momo Just looked those up, sounds nice in the vegetable version, kind of like steamed samosas or spring rolls, rather than fried.

Beef Burger, Sesame seed bun, Bacon, Cheese, Caramelised Onion, Tomato, iceberg lettuce, Soft fried egg, pineapple, and beetroot with either tomato or bbq sauce. They are outstanding…. as for Falafel - I’m sick of trying them over and over and being terribly disappointing.

I'm doing a Fr Jack special this evening... Colcannon jacket potatoes. 1. Bake the potatoes. 2. Cut the potatoes in half. 3. Scoop the potatoes out of their jackets. 4. Use that to make the colcannon. 5. Put the colcannon in the jackets. 6. Quick bake for another 10 minutes. Colcannon? I feel dumb. Lol

The Beetroot that gets used on burgers is ‘pickled’ but it doesn’t taste at all like it’s pickled, like pickled gherkins or onions do. It is slightly sweet, earthy tasting. Definitely not tangy or acidic like pickles. Most Australians absolutely despise pickles on burgers. As for dying the bun - if the burger is assembled properly, the beetroot is placed between the tomato and beef patty. The idea is that the bun never sees the beetroot, and the tomato and lettuce underneath soaks the juice up. The beetroot also acts as a temperature barrier between the tomato (which should be cold) and the patty (which should be hot) with the beetroot tasting best between the two. Debate rages if the pineapple goes with the beetroot for the same reason - the temperature buffer - or if the pineapple goes with the bacon on top of the patty because the sweet/salty contrast….. This is a decent looking example. A bit small though.

I love pickled beetroot (crinkle cut is best), and enjoy it regularly... But I can't stand pickled gherkins, they give me the boak 🤮 I am also a big lover of pickled onions, pickled shallots, pickled garlic, and pickled walnuts.

I can never have fried dumplings (even though I see many people having it these days). Fried momo was never a thing 20 years back. Steamed version is the only one for me.
