The only one I've seen is Black Mirror: Bandersnatch and it was enjoyable. Final Destination 3 also had this as a feature on the dvd, but it didn't do much but marginally change a few death scenes and inexplicably save the worst character from dying.

They can by fun I watched that new Netflix one Yeaterday (Choose Love) A generic romcom but the gimmick made it interesting.

It might work if you could take a story with an obvious plot--"girl goes to the big city to become Broadway star"
and then you can go really weird with it
"then a giant monster shows up in town"
or
"her co-star is exposed as a South American drug lord in hiding"
or
" a passing comet causes people to turn into talking vegetables--but the show must go on."

Part of the fun of watching a movie is not knowing what's going to happen. The discovery and surprise of the story unfolding makes it compelling. You don't get that if you get to decide what happens.
