I admit I haven't read a whole lot of them, but was wondering if anyone had any favorites. I can think of three I would recommend:
Rogue One: A Star Wars Story by Alexander Freed - It's been a while, but I remember there being a lot of little details left out of the film that was really good.
Star Wars: The Last Jedi by Jason Fry - Worth reading for the opening alone, which has Luke Skywalker dreaming of what his life would have been like if he'd never left Tatooine and joined the Rebellion. A very bittersweet moment.
Halloween by Curtis Richards - I especially liked the stuff of young Michael Myers while at the inane asylum

New Nightmare Revenge of the Sith
I don't know if they count, but Ian Doescher wrote the Star Wars original trilogy as if they were Shakespeare and they're really good.
