Why do characters in movies/tv never use electric kettles? Even in the flashiest, hi-tech homes, it always seems to be a whistling kettle on a hob. I can see the dramatic potential in using the kettle's screech as a cut point to someone screaming etc. but no other reason.

I think you answered your own question. Electric kettles simply aren't dramatic enough, while whistling kettles are more noticeable to audiences. I think that's also why wine-drinkers in movies and TV generally prefer red wine over white--a goblet full of a deep red liquid just looks more intense than a pale variety.

As you and the other poster said, kettles whistling steam are a dramatic cliche that symbolizes a situation heating up to the point of almost exploding. I haven't seen it used outside of comedy, however, at least not in the last two decades or more (a good example of it used well is Shaun of the Dead where it's slowly rising in pitch in the background as the tension in the scene rises). I'm sure there are examples of electric kettles being used in the background but I doubt anyone would even notice unless they're big into background details.

Or even an electri kettle that whistles, not often do you see the microwave go BING!
