Cauliflower, green beans, & blanched, sliced almonds. I made this today, using two skillets. One was for browning the cauliflower florets in butter, the other was for cooking the cut green beans in olive oil. Combined the two and garnished with blanched sliced almonds. Really quite a delicious dish, if I do say so myself:

You could add some shredded cooked chicken breast to this too, if you wanted to get extra protein out of the dish...

that looks like a yummy side dish, zolo I think olive oil adds so much to my cooking! did you use any spices? salt??

ZR, the combination sounds good. However, I think that I would saute both veggies, in a combination of the oil/butter.
Butter adds more flavor, and oil tends to support the butter against burning.
Did you use lemon, garlic, herbs, etc.?

I didn't think to add any spices, because I was hoping for the browned cauliflower along with the browned butter to create its own special flavor. Which it did... but I guess I could've added some roasted garlic and sautéed onions, come to think of it. Yes, I added salt, plus I use salted butter. Other than that, it was pretty minimalist. But darned good. lol

As I mentioned to Enigma, I chose to go pretty basic and minimalist with the added flavoring. I opted for just salt, and salted butter. But I could see added roasted garlic and sautéed onions to this, as well as a topping of black truffle butter, maybe even some shaved Parmigiano-Reggiano cheese on top? Not sure how fancy I want to get with it, though. Me, I'm more of a "simpler is better" sort of cook. lol

Sounds yummy to me! I love the taste of veggies when they are sauteed, just a little s & p. Butter gives a nice flavor. And blanching the almonds give a depth of flavor. I need to try this! I love veggies!

Pretty good. I'm not a big vegetable guy but I would probably enjoy that. Just needs a whole bunch of beef and chicken added to it.
