My elderly neighbour that tried to kill himself in my garden is having his birthday this saturday. After the accident he has gotten elderly care, they come with food, clean his house etc. The thing is that he said on the phone, that he doesn't like the food brought to him (i'm not surprised, that kind of food is very bland) and boy can I cook. Yesterday I went to the supermarket and bought portion sized pie tins, these will be my birthday gift to him.
So, what stuffings do you like in pies? Either food or sugary things. I have about 30 to stuff and so far I will make apple pie, rhubarb pie, cheese and ham pie, spinach and bacon pie...
Need some more so he can pick and choose.

My birthday greetings, an best wishes, to the gentleman. I'm guessing, from your spelling of "neighbour," that you're British. And, I'm further guessing that, by "portion sized" pie tins, you mean ones that are about 10-12 centimeters, in diameter ... I hope I have that right. (In the US, we call those "pot-pies.") Some thoughts that I came up with:
-- Potato and Leek. I would add some peas and carrots, for color. -- Chicken with vegetables. "Chicken pot-pies," are very popular, here. -- Broccoli and Cheddar cheese -- Bean/Legume. Here, I'm thinking of "Chickpea/garbanzo," with kidney beans, basic green-bean, pinto bean, cannelli bean ... any combination of favorites. I would simmer them with onion, bacon etc.. If "blandness" is bothering him, you might ask him what herbs/spices are his favorites. I would also ask him, and/or the people who deliver his food and services, if the "blandness" is the result of a medical professional's concern for salt intake. You want to be careful about that.

The food is made so it will suit as many as possible, like mashed potatoes are made from the powdered stuff and not from fresh potatoes (many elderly have trouble swallowing lumps) and the food is low on greens as many of them eat Waran etc. The only food related healthissue he has, is that he needs to put on weight, desperatly. So I will not need to hold back on the calories at all, I bought full cream, real butter, anything to make small servings as rich in calories as possible. Chicken pie, that one goes on the list.
