it seems possible because, if you look at both the other threquels in the MCU, Iron Man 3 and Captain America: Civil War, those both made over $1billion worldwide, so surely Thor can do the same, right?

Not very likely at all. Iron Man was always the most popular and Iron Man 3 came immediately after The Avengers and all its success.
Captain America 3 was essentially an Avengers movie with Black Panther and Spider-man debuting in it.
Thor 3 won't be nearly as successful as those two but I do think it'll be the most successful Thor movie so far. Maybe $700-750 million or so.

You also have to factor in that there are far more movies coming out now than in the early days of the MCU, and nobody wants to consider this but that does impact the box office of these films. The entire casual audience would have gone to see one or two of them when that's all that came out, but they won't go see all 6, 5 of which that will have come out in just 6 months this year.
I suppose it's possible to go higher but I don't think I would put it far off of 800 as well.
