I know that the men at the announce table kind of know how long a match is supposed to go and often give signals to the wrestlers in the ring as to when to wrap it up (by holding up a certain number of fingers representing minutes or the pen for them to end it). But do they know who is supposed to "win" or are they kept in the dark to make their announcing sound more authentic and are just as surprised by the ending?

Actually, it's the refs who relay time information to the wrestlers. They're fed the info through their ear pieces.
And no, the announcers don't know who is going to win. There're are many interviews where guys like JR and the King specifically say they don't want to know who'll win so they can call it with genuine emotion.
