not "odd" job but Harrison Ford was a carpenter.
"He worked as a carpenter in Los Angeles before achieving fame in movies, mainly doing home remodeling work. He had a reputation as one of the best cabinetmakers in the city, and his services were much in demand on Los Angeles' trendy Westside long before he became a movie star."

During his carpenter days, he built a deck for Sally Kellerman.
During his carpentry days, he also remodeled the bathroom of Judy Evans, a costume designer, who later did the costumes for sitcoms such as Soap (1977), Benson (1979), The Golden Girls (1985), and the dramatic series Beauty and the Beast (1987).
AND One of his jobs in his early acting days was as a roadie on tour with The Doors.

Wes Craven was a teacher, which is amusing considering he made a career out of bumping off teens in movies later. Bonus: he directed a few porns before solidifying himself.
Steve Buscemi was a firefighter.
Chris Pratt, Javier Bardem, and Diablo Cody have worked as strippers.
