I'll give an odd kind of a choice, but I don't read many "hitman books," so here goes... Ellery Queen's The Player on the Other Side. It has a novel twist on the--er--concept that recalls, of all things, Hitchcock's (and, I should note, Bloch's) Psycho.

...don't know if it is in book form, but the film Sicario is an outstanding hit man film... Sicario is solid (within my Top 196 movies) but The American (within my Top 26 movies) is definitely the #1 of the genre if you ask me. it's one of the most underrated movies on IMDb in general.
